Mom's Egg Salad

While I did not eat this, Mother would fix egg salad a lot of times for lunch while I was growing up.

Boil eggs.
Peel and mash eggs.
Salt and pepper to taste.
Add mayonnaise.
Dash of mustard (optional)
When Mother was growing up, sometimes her mother would add a chopped pickled pepper.
Sometimes her mother would put celery seed in it.

Directions for boiling the eggs: 
Cover the eggs with water and cover pan.
Heat to boiling.
If you are using an electric stove, turn the heat off.
Let sit on the burner for ten to fifteen minutes.
