Lime Salad
1 pkg. lemon Jell-O
1 pkg. lime Jell-O
3 cups boiling water
1 #2 can crushed pineapple
1 cup finely chopped pecans
24 large marshmallows
2 Tablespoon lemon juice
2 small pkg. cream cheese
Pour boiling water over Jell-O and marshmallows. Stir until
melted and chill.
Mash cream cheese with lemon juice until smooth. Add
pineapples and juice. Blend. Add nuts and chill. Then
combine with other ingredients and chill. Place in mold and
serve with lettuce.
This was a holiday staple for us; however, the "pink stuff" has
taken its place. Mother never did serve this with lettuce. She
sometimes left the pecans out. She does not remember
where she got the recipe.
