Dried Beans
The following is the instructions that my mother gave me for cooking dried
beans:
Pick through the beans for stones and any bad beans.
Wash the beans.
Cover with water and parboil the beans for about 30 minutes.
Drain.
Cover with water.
Season with pork grease, bacon grease, or some sort of pork seasonings.
Simmer until tender (usually about 30 minutes).
Add salt right before taking up.
